My friend R, who is a creative cook, taught me this awesome spicy pasta recipe. I usually make this with whole wheat angel hair pasta and use ready-to-use Classico Sun-dried Tomato Pesto for the sun-dried tomato flavor in the sauce.
Pasta with Spicy Sun-dried Tomato Sauce
(serves two)
Preparation time: 5 minutes
Cooking time: 30 minutes
Ingredients
250g pasta
5 cups water
Salt to taste
For the sauce
1/2 tbsp butter
2 cloves garlic
2 red chilies
6-7 pepper seeds
1 large tomato, finely chopped
½ tbsp. butter
½ medium sized onion, finely chopped
1 tsp dried parsley
1 tbsp sun-dried tomato pesto
½ cup milk
Salt to taste
1 tbsp grated parmesan cheese
Method
Put the pasta to boil in salted water and let it cook. When done, drain the water and set it aside.
Heat 1/2 tsp butter in a heavy pan over medium-low heat. When hot, add garlic and fry until golden brown. Now add red chilies and pepper seeds and fry for 10 seconds. Add in the chopped tomatoes and let it cook. Turn off heat when done and let the mixture cool. Grind the mixture when it attains room temperature.
Heat another 1/2 tsp butter in the same pan over medium heat. When hot, add dried parsley and chopped onion and fry until the onion turns translucent. Now add the ground paste and sun-dried tomato pesto and fry for 5 minutes. Lower the heat and mix in milk. Season with salt and turn off heat. Add in the cooked pasta, mix well and cover the pan. Garnish with grated cheese.
